While on vacation, a just-divorced writer buys a villa in Tuscany on a whim, hoping it will be the start of a change for the better in her life.  Starring Diane Lane, Raoul Bova and Sandra Oh. Its roughly based on the book "Under the Tuscan Sun" by Frances Mayes which reads more like a travel log and doesn't really include this same story.

Frost is in the Air

For the first time this year I had to turn on the furnace last night.  Frost warnings are out and it`s beginning to feel like fall has hit full swing these past few days.  I`m getting that nesting feeling again.

Some Favorite Williams Sonoma Recipes

Lately I haven't had any time to try any new recipes or cook anything new.  We're on a restricted diet around here based upon my dad's limited ability on what he can and can't eat.   As such I've gained 25 lbs. and he's maintained his weight which is good considering his health issues.  However, it's left me craving new taste sensations.  I found myself sifting through some old receipes looking for some inspiration a tonight nd found a few that I had printed off from the Williams Sonoma Recipe site.  So I'm posting my favourites here. Barefoot in Boston on the Move with the Barefoot Contessa

My favourite chef Barefoot in Boston has recently moved to Houston, Texas.  A move across the country is a brave move for sure.  Leaving family and friends can cause serious withdrawal symptoms, and while the move was on I was truly missing her cooking.  So recently I checked out her site again and found she was making one of my favourite Barefoot Contessa recipes.  So I'm in - It's chicken for dinner tonight.




1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1½ teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon


Preheat the oven to 400 degrees.

Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don’t allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 X 12-inch baking dish.

Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn’t browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

Poached Salmon

I've been thinking about getting one of these for quite some time since I love poached salmon.  However, I keep hesitating because it just looks so awkward to store and I've got limited space anyway.  Then comes the next question - would I use it enough to make it worthwhile? 


If anyone has any great recipes for this thing let me know.

Profile Baked Bree

Every once in awhile I stumble across something so great that it becomes a classic for me.  This chicken recipe is one such recipe.  My son advised me (and I quote here) "I'll disown you mom if you don't make this dish again.  It's that good."  So on that note I made it for my father last night when he stayed and he is in full agreement with my son.  If that isn't a good enough endorsement for you, take a look at the recipe for Honey Garlic Balsamic Chicken on the Baked Bree blog



If you really want some great family meals, I highly recommend this site.  The name of her blog is quite catchy and invokes one of my favourite - Brie, however, in this case it stands for Bree the author and great home cook who prepares all these wonderful meals for her family of five.  Enjoy.

Also, for those looking for Super Bowl recipes (of which I am one) these are two that I fully intend to indulge in this weekend.

I've been eating out and on the run so much lately that I'm unintentionally undoing all the good my Whole Living Challenge created.  So much so that I'm actually starting to crave summer foods.  This pasta salad was a big hit with my son this past summer so I'm going to make up a batch again just for something different.

What's for Dinner? Steakhouse meal

When my son saw this on my computer screen his immediate reaction was "All right!  Is that what we're having for dinner tonight?  His face fell when I pointed out I would have to go out and buy some fresh steaks and I had chicken unthawed instead.  He's been after me ever since and I finally broke down and purchased the steaks - completely blowing my diet in the process.  I was really craving red meat anyway but I'm finding this whole living thing hard to do since my family were really into my new cooking style and truthfully so am I.  However, no one seems too thrilled with the meals I've been making on the plan and have been complaining about it.  So, I'm still trying to figure out how to do this.  However, tonight... let them eat steak.

What's For Dinner? Walnut Crusted Chicken Breasts

I’m cheating a bit already...
I know I’m supposed to be in the detox phase still, but my family saw this recipe and requested it so I agreed.   We all really enjoyed it.
Prep: 20 minutes Total: 35 minutes
Packed with omega-3 fatty acids, walnuts add richness to this light breading; the coating keeps the chicken moist. For longer shelf life, store nuts in the freezer.

Ingredients

Serves 4 .
  • 2 slices whole-wheat bread, dried
  • 1/3 cup walnuts
  • 2 tablespoons Parmesan cheese, freshly grated
  • Coarse salt and ground pepper
  • 1 large egg white
  • 4 chicken breast halves, boneless and skinless (6 to 8 ounces each)
  • 1 tablespoon grapeseed oil
  • Lemon slices, for serving
Seasonal green salad

Directions

1.     Preheat oven to 425 degrees. In a food processor, combine bread, walnuts, and Parmesan; season with salt and pepper. Process until fine breadcrumbs form. Transfer to a shallow bowl. In another shallow bowl, beat egg white until frothy.
2.     Season chicken with salt and pepper. Dip each breast into egg white, letting excess drip off, and then into crumb mixture, pressing to adhere.
3.     In a large nonstick ovenproof skillet heat oil over medium heat. Add chicken and cook until lightly browned, 1 to 3 minutes. Carefully turn chicken over and put skillet in oven. Bake until chicken is golden brown and cooked through, 8 to 12 minutes.
4.     Serve chicken with lemon slices and green salad.

What's for Dinner? Rosemary Pork Chops

This was the recipe that started my cooking career...
This is a simple recipe.  I can honestly say that this is the first recipe that I tried that gave me the courage to try more.  It’s not complicated, but then I don’t need complicated in my life.  I need the simple step by step photos that Courtney of Barefoot in Boston posts.  Pay a visit to her site.  I’ll bet something catches your eye.
